Edible flowers and delicious recipes

Daisy lollipops

Ingredients:

  • 2 cups sugar
  • 2/3 cup water
  • 1/8 tsp cream of tartar
  • 2 – 3 drops flavouring oil

Method:

To make these lollipops, make sure that you have the right edible flowers. The daisies you use should be organic and free of any pesticides. Combine the cream of tartar and sugar with the water. Stir until completely dissolved. Boil until it reaches approximately 145 C. You will need a candy thermometer for this. Remove from heat and add your flavouring. Pour into the candy molds and add a daisy to each one. Add your lollipop stick and cover with more of the mixture. Allow to set and enjoy!

Candied rose petals

Ingredients:

  • 2 large roses
  • 1 egg white
  • 1 tsp water
  • 1 cup sugar

Method:

Roses are by far one of the most popular of all edible flowers. To make your own candied petals, remove them carefully from the flower head and place on a lined baking sheet. Mix the egg white and water. Brush the mixture on the petals. Sprinkle with sugar right away. Allow the petals to dry for about 24 hours. You can store them for up to 3 weeks.

Stuffed naturtium

Ingredients:

  • 1 package cream cheese (softened)
  • 1 garlic clove (finely minced)
  • ½ Tbsp fresh chives
  • 1 Tbsp chopped fresh lemon verbena

Method:

These edible flowers are loved for their spicy and savoury flavour. Before you begin, make sure that you wash them thoroughly. Pick them just before you plan on serving them so that they are really fresh. Mix the cream cheese and herbs together thoroughly. Season to taste. Add 1 to 2 teaspoons of the mixture to the centre of the flower. Gently pull the petals over the cheese and press lightly to make it stick. Enjoy!
